ChocOATchip Protein Muffins

  • 1 1/2 large ripe bananas
  • 1/2 cup no sugar added applesauce
  • 4 egg white or 3/4 c. egg white substitute
  • 1/2 c. Plain Fat Free Greek Yogurt
  • 1 t. gluten free vanilla extract
  • 1 c. gluten free oats
  • 2 c. gluten free oat flour
  • 1 t. baking soda
  • 1 t. baking powder
  • 3 T. Whey Isolate (I used Your Whey) or 1/2 scoop Vanilla Protein Powder
  • 1/3 c. 70% or higher dark chocolate chips

Preheat oven to 375 degrees. Mash bananas and mix with applesauce, egg whites, yogurt and vanilla. Add in oats, oat flour, baking soda, baking powder, protein and chips. Blend well - mixture will be gooey and not runny. Please 2 heaping spoons into each muffin tin. Bake for 15-20 minutes or until toothpick comes out clean.

Quickie Quinoa Burrito

  • 1 Food For Life Brown Rice Tortilla
  • 1/4 c. Black Beans
  • 1/2 c. cooked quinoa or brown rice
  • 1 chicken breast, cooked and shredded
  • Romaine lettuce
  • 1 Tablespoon Low Fat Kraft Balsamic Vinegrette Salad Dressing (optional)
Mix Black Beans, Quinoa, Chicken, Romaine Lettuce and dressing together in a bowl. Lightly spread water on both sides of the tortilla and microwave for 10 seconds. Once tortilla is pliable (you may need to microwave tortilla longer), spread chicken mixture on tortilla and wrap burrito style.

Pumpkin Smoothie

  • 1 cup skim milk or low fat plain Kefir
  • 1-2 scoops Vanilla Tera's Whey Protein
  • 1 Large Tablespoon Libby's Pumpkin
  • Dash of McCormick Pumpkin Pie Spice

Blend in Blender until smooth. Takes just like pumpkin pie. For a thicker smoothie, add in a spoonful of Greek Yogurt

Gluten Free Protein Pancakes

Makes 1 serving - Calories: 330 / 3 g. Fat / 24 g. Protein / 53 g. Carbs

Blend in a Magic Bullet/blender until smooth. Cook on a griddle for 3-4 minutes on each side. Top with fruit or real maple

Pumpkin Protein "Cup" Cakes 
Makes 1 serving - 130 calories, 25 g. protein, 0 g. fat, 6 carbs

Mix all ingredients together in a coffee mug. Microwave for 45 seconds. Take out of cup and top with whatever you like. I use 1 Tbsp PB2. YUMMIE!!!!!!
